The city rewards curiosity and invites you to slow down, linger, and savour every moment. While it’s a sprawling metropolis, many areas are surprisingly walkable. This allows you to experience history, culture, and food without long commutes. It’s about more than just having an itinerary and sightseeing – it’s about walking through the city, feeling its energy, engaging your senses, and letting Istanbul reveal itself at its own pace. To experience the city like a local isn’t about ticking off monuments. Instead, it’s about noticing the details, soaking in the atmosphere, and letting the city unfold organically.

Istanbul is one of those rare cities where a stopover can be more than just a layover, rather it can be the trip itself. In other words, Istanbul is not just a convenient stop on your travel itinerary, but a destination that can stand alone, where every corner offers a moment worth savouring. Best time to visit & weather
April–June and September–October are ideal. The weather is mild, with clearer skies and smaller crowds. Summers are lively and bustling, while winters are cooler and rainy.

Where to stay in Istanbul
Each neighbourhood has its own vibe, and choosing the right base can shape your experience so best to choose wisely based on your interests.
Galata offers cobbled streets, boutique cafés, and a quieter, artsy vibe which is perfect for wandering and people-watching. Just know that it’s very steep so be prepared.
Karaköy pulses with energy. Trendy restaurants, street art, and ferries make it ideal for exploring multiple neighborhoods in a day. Don’t miss Galataport, the redeveloped waterfront, where cafés, shops, and museums bring the Bosphorus to life.
Alternatively, on the Asian side, Kadıköy is a lively, local hub full of markets, cafés, and street food. It’s a great way to experience Istanbul life away from tourist crowds.
For history at your doorstep, Sultanahmet is another option which puts you steps from Hagia Sophia, the Blue Mosque, and Topkapi Palace. It’s convenient if you want to experience the classics without feeling rushed.
Finally, Beşiktaş blends local charm with nightlife, waterfront walks, and markets, making it versatile for those seeking both energy and accessibility.
Tip: Match your neighborhood to your pace. Pick lively areas like Karaköy or Beşiktaş if you love movement and nightlife. Choose Galata or Kadıköy if you prefer slower, wandering days with cafés and street life.

What to eat in Istanbul
Eat. Everything. Istanbul is a foodie paradise, even for those with a sensitive stomach.
Breakfast of champions
I’m not kidding – the spread takes over the entire table and you can expect a variety of dishes: eggs (menemen), cold cuts, cheeses, olives, bread, nuts, condiments, and, of course, tea or coffee. It’s the perfect way to start your day.
Street food & light meals
Istanbul offers endless options for a quick bite or meal on the go. From delicious çorba (lentil soup) to meze by the water for a relaxed bite but on the go, you could also try the following:
- Ekmek (fish sandwich): fresh, tangy, and unforgettable; especially around Kadıköy and Eminönü along the Bosphorus
- Kumpir (stuffed potato): customisable flavour combinations
- Carts selling: grilled corn, chestnuts, simit (similar to a bagel) ideal for quick snacks
Kebabs
Meat lovers rejoice. Turkish kebabs are everywhere and delicious, with skewered meats served alongside bulgur, roasted chili, and salad. Note that these days there are usually some vegetarian options available at many restaurants.
Dessert
The sweet scene is also elite. You can’t walk a block without spotting a sweet shop. Notable cafés include Hafiz Mustafa and Mado, offering:
- Künefe: a kadayif and cheese dessert soaked in syrup
- Lokum (Turkish delight): endless varieties with unique textures

My Istanbul itinerary is flexible. It’s a city best experienced at your own pace. My favourite way to explore any city is on foot: walking, looking up, noticing the details, and soaking in the vibes. Istanbul rewards this curiosity with incredible history, architecture, and unique experiences.
Some unmissable sights and experiences include:
- Basilica Cistern: an underground marvel of Byzantine engineering.
- Hagia Sophia: a timeless symbol of the city’s layered history.
- Blue Mosque: iconic, stunning, and serene.
- Istanbul Grand Bazaar & Arasta Bazaar: vibrant, bustling, and full of treasures.
- Istanbul Modern & Galataport: contemporary art and lively waterfront vibes.
- Istiklal Street: a lively pedestrian avenue with historic arcades, cafés, street musicians, and shops; a great place to enjoy the city’s energy.
- Taksim Square: the heart of Beyoğlu, ideal for people-watching and catching the city’s rhythm at any time of day or night.
- Dolmabahçe Palace grounds: stroll the opulent gardens and waterfront near Beşiktaş, soaking up grandeur without entering the palace.
- Gülhane Park: a peaceful retreat amidst the city’s energy.
- Ferry ride along the Bosphorus: see the city from the water; consider an evening cruise for magical sunset views.
- Rooftop cafés & dinner spots: enjoy the skyline and city lights while dining.
- Evening vibes & nightlife: watch people fishing off the Eminönü Bridge, catch live music in bars, or stroll neighbourhoods alive with energy long after sunset.
Finally, after a long day of wandering, treat yourself to a traditional Turkish hammam – a perfect way to relax, refresh, and even enjoy a massage.

Practical tips for your Istanbul itinerary
A few things to remember when you’re visiting Istanbul.
Visa
Great news for Australians, as of 17 April 2026, you no longer need a visa to visit Turkey. Australian passport holders can now enter visa-free for up to 90 days within any 180-day period. Make sure your passport is valid for at least 6 months from your arrival date and check Smartraveller for current travel advice before you go.
Quality over quantity
Istanbul is huge and straddles two continents (Asia & Europe). Focus on experiencing neighbourhoods deeply rather than trying to see everything.
Get an Istanbulkart
Use public transport such as Metro, Tram, and Ferry to move around efficiently.
Taxi & Uber tips
Always ensure the driver uses the meter, especially when coming from the airport. Uber works, but sometimes you must choose the higher fare option for drivers to accept.
Safety
Istanbul feels safe for visitors, day or night. Standard precautions apply but keep an eye on belongings in crowded places, and be mindful when crossing streets. Overall, the city welcomes travellers with warmth.

Fantastic to have from the moment you arrive. I use Airalo, just note that for Turkey you need to install and activate before arrival. You won’t be able to reload whilst in the country.
Money
Best to carry some local currency as many cafés and markets prefer small amounts of Turkish Lira (TRY), even though cards are widely accepted.
Language & culture
Always be respectful and a few words in the local language go a long way. Use simple greetings such as “Merhaba” (Hello) and “Teşekkür ederim” (Thank you).
Limit neighbourhoods per day
Don’t overpack your itinerary and allow time to breathe and explore.
Walk whenever possible
If the weather is good, explore streets on foot and soak up the vibes, sunshine, and street life. Mornings in particular are quiet and a great way to enjoy getting around before the crowds.
Mandatory breaks
Stop in cafés to people-watch, relax and drink multiple cups of çay or Turkish coffee, with dessert.
Eat all the food
Turkish breakfast is phenomenal – a spread that will keep you satisfied for hours. Street food is excellent, too. Avoid overpriced touristy restaurants, especially in Sultanahmet.
Embrace the cats
Istanbul’s cats are everywhere and part of the local rhythm. Pause to observe or photograph them as they are part of the city’s charm.
